Vegan Gingerbread Overnight Oats

Christmas is coming! I am literally buzzing for gingerbread houses and gingerbread lattes because I am 101% basic white girl. And I am not even sorry about it.

So, in an act of care in the basic white girl community, I felt it was my duty to combine a popular breakfast trend with the christmassy love of my life.

And thus Gingerbread Overnight Oats were born.

Its totes simple, this is what you need;

1 cup of oats

1 cup of Coconut yogurt

1 tbsp ground ginger

1 tbsp ground cinnamon

1 tbsp agave nectar

1-2 tbsp almond/coconut milk (this is personal preference)

Then simply mix it altogether in a seal-able container, leave it over night and then enjoy in the morning, preferably listening to Christmas songs on full volume whilst wearing some bitching christmas PJs. It is also lovely accompanied with a gingerbread latte 😉


Serve either cold from the fridge or warmed up in the microwave.

You can alter the spices to your own preference and even forgo the agave nectar in favour of a sweetener to make it a little less sugar filled!
